I’m trying to lean towards an anti-inflammatory diet these days, which means very little grain and dairy products. I know, the very joys of life itself. I’m not yet diligent enough to do a total elimination, but I’m trying to focus on other flavors and ingredients. With that in mind, here’s what I’m making for dinner this week!
- Monday – Honey-Glazed Pepper Chicken from the latest issue of Bon Appetit with roasted cauliflower and watermelon salad.
- Tuesday – Grilled burgers with caramelized onions, kale Caesar salad, and tater tots (you know, the kind you get from the freezer section and bake in the oven! yummy!)
- Wednesday – Slow cooker pulled pork with charred green beans. I’m still looking for a pulled pork recipe that I really like…I’ve tried a few from a few different cookbooks. All are good, but none are quite what I hoped for. Do you have a good one to share?
- Thursday – Peanut-lime chicken with cold rice noodles – I’ve been looking for satisfying, cool, light recipes for summer. I can’t wait to try this one!
- Friday – TBD, but probably out to eat! Our town has closed down Main Street to allow for more outdoor seating. The large tent lit with string lights is both socially distant and festive and it’s a fun way to spend a weekend.
